FAQs

We take pride in producing high quality meats from the very best ingredients. Below are some frequently asked questions, however feel free to contact us if you have a question that is not answered below.

Each of us have a background in farming and agriculture, but the reason we began Contentnea Farms was to have total control over the entire meat process, from the beginning of the animals’ lives to the end. Being able to oversee every step of the operation allows us to know exactly what we are eating and what we are selling. We believe we provide high quality meat because we know exactly where it came from.

Our cattle and pork are raised on local farms in Greene, Lenoir, and Wayne counties.

Contentnea Farms cattle is grass-fed and grain-finished free of added antibiotics, hormones, and additives. After processing, our beef is dry aged for 21-days. Dry aging at a controlled temperature aids the natural enzymes in the beef to breakdown which adds to the beefs tenderness and flavor.

Live weight refers to the live, standing, and unprocessed animal’s weight as it is in the pasture before any processing has begun. Live weight is used as the starting point in determining the estimated yield of meat from the livestock.

Hanging weight refers to the weight of the carcass after livestock has been slaughtered, bled, and dressed (removal of the skin, head, hooves, and all internal organs). Hanging weight does include the bones, muscles, and fat. The hanging weight is important for pricing and processing. The hanging weight is roughly 60-63% of the live weight.

Cut weight refers to the final weight of individual cuts and products that you will receive after the carcass has been processed and cut into various portions. This weight accounts for any deboning, trimming and portioning done by the butcher to prepare for the sale of the meat. The cut weight is the actual amount of meat you will receive which is roughly 65-70% of the hanging weight.
